I have a difficult time changing widths mid-stroke, but also have difficulties stopping a line, then starting from an end without it being very very obvious that that's what I did.

If you click the little green circle next to Size on the Pen Tool settings, you’ll get a window where you can adjust the pressure curve::

You can adjust it until it gives you responsiveness you desire for your particular drawing technique (depending on your tablet, you may also have a similar option in the tablet settings).

Beyond that, yeah, it’s just practice and learning how the line reacts. Draw draw draw!
